GLUTEN-FREE BLUEBERRY MUFFINS

Good morning lil muffin tops!

…hmm that sounded a lot better in my head, ANYWAY! I’ve been up since 5am this morning catching up on working, emails and treat ideas. I’m really enjoying the process of making treats the night before and knowing I will be sorted throughout the day is such a win!

Like many of you I tend to forget to pack lunch and being on the go means I end up spending WAY to much money at Woolworths on healthy snacks. Its crazy to think working with Clicks Smartbite would show me how much money I could actually save if I rather take 30minutes of my time to make my own god dam snacks!

I know I know you get home late from work dinner or kids to attend to, but here’s the deal. You will spend that time in total every day stopping at a shop, standing in a line and having to work that extra hour to make the money you would spend on the treats that you could essentially be making yourself in less time put together.

So here is a challenge, why not set aside some time on Sunday to make yourself an easy treat for the week.

INGREDIENTS:

  • 8 large eggs
  • 1 cup apple sauce
  • 1/2 cup Smartbite almond flour
  • 1/4 cup Smartbite coconut flour
  • 1/4 cup Smartbite gluten-free oats
  • 1/4 cup Smartbite cashews
  • 1/4 cup Smartbite honey
  • 1/4 cup milk
  • 1 tsp baking powder
  • pinch of salt
  • 1 cup blueberries
In the evening :
  1. Preheat the oven to 180. Line a muffin tin with paper muffin cases, or if you are using silicone muffin holders, then place them on a baking tray.
  2. Place the eggs, apple sauce, almond flour, coconut flour, oats, cashews, honey, milk, baking powder and salt in a food processor. Puree until smooth. Stir in the blueberries.
  3. Spoon the mixture into the lined muffin tin.
  4. Bake for 30-35 minutes until golden and cooked through.
  5. Allow to cool before serving.
